Vanilla cupcakes with that cookies and cream frosting on top is nearly too good too be true they are made completely from scratch!

Ingredients

For 12 cupcakes:
  • 180g unsalted butter, softened
  • 125g granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 180g self-rising flour
  • 1 tbsp milk
Buttercream for 12 cupcakes:
  • 75g unsalted butter, softened
  • 200g cream cheese (Philadelphia)
  • 225g confectioners sugar
  • 125g Oreo, crushed
Method

To make the cupcakes:

1. Preheat the oven to 175 C / 345 F and line a cupcake pan with 12 cupcake liners.

2. In a large mixing bowl, cream the butter and sugar. Beat in the eggs one at a time. Add the vanilla and the self-rising flour and mix on low until just combined. Beat in the milk.

3. Divide the mixture evenly into cupcake papers using an ice cream scooper.

4. Bake for about 20-25 minutes or until a wooden stick inserted in the centre comes out clean.
Remove from the oven and allow to cool for about 5 minutes before removing from the pan.

To make the buttercream: 

1. Beat the butter and add the cream cheese until fluffy. Add the confectioners sugar in 3 times. 

2. Add the crushed Oreos and mix until well combined.

3. Transfer buttercream to a piping bag fitted with a tip of your choice.

To assemble:

1. Pipe buttercream dollops on top. You can sprinkle with crushed cookie dust and or top with a Oreo if desired.
