This asparagus pie is a delicious tasty Spring time pie recipe, perfect for lunch or dinner, serve with a salad and Dinner is served. 
The crust is made without butter and is very easy to make.

Ingredients

For the crust:
  • 135g (1 cup) all-purpose flour 
  • 1/2 tsp salt
  • 60 ml (1/4 cup) vegetable oil
  • 60 ml (1/4 cup) ice cold water
For the filling:
  • 3 eggs
  • 150 ml milk
  • 200g cottage cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8-9 asparagus, ends trimmed
Method

1. Preheat the oven to 205 C / 400 F and grease a 9-inch pie pan with butter or oil.

2. To make the crust: In a medium mixing bowl, beat oil and ice cold water with a fork to thicken. Stir in the salt and flour. Stir until well combined. 

3. Press the dough into the greased pan and place in refrigerator for about 15 minutes.

4. Trim the ends of the asparagus and roast in pan over medium heat. Season with salt. Set aside.

5. To make the filling: In a medium bowl, beat the eggs and milk. Stir in the cottage cheese, salt and black pepper.

6. Pour the filling into the pie pan and place the roasted asparagus on top.

7. Bake in preheated oven for about 35 minutes.

8. Remove from the oven and allow to cool for about 15 minutes before cutting.
