Basic vanilla cupcakes to decorate with buttercream and the topping of your choice. 
They're super-simple to make.

Ingredients
  • 180g unsalted butter, softened
  • 135g white sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 180g self-rising flour
Method

1. Preheat the oven to 175 C / 345 F and line a cupcake pan with 12 cupcake liners.

2. In a large mixing bowl, cream the butter and sugar. Beat in the eggs one at a time. Add the vanilla and the self-rising flour and mix on low until just combined. Beat in the milk. Do not overmix your batter, you should only mix it until the ingredients are mixed. Over mixing will develop the gluten in the recipe which will make your cake rise beautifully in the oven, and then fall as soon as it is removed.

3. Divide the mixture evenly into cupcake papers using an ice cream scooper.

4. Bake for about 20-25 minutes or until a wooden stick inserted in the centre comes out clean.
Remove from the oven and allow to cool for about 5 minutes before removing from the pan.

5. Remove cupcakes from pan and transfer to a wire rack to cool completely before frosting.
