Strawberry Pudding | Episode 326


YIELD: Serves 6 - Prep Time: 15 M - Cook Time: 15 M - Total Time: 30 M


1 egg
6 tbsp granulated sugar
3 tbsp cornstarch
600 ml milk
1 tsp vanilla extract
1 tbsp butter
6 strawberries


1. Puree the strawberries in a food processor or blender until smooth. Set aside.
2. In a medium saucepan, stir together the egg, sugar and vanilla. Add the milk and cornstarch. Stir until well combined.
3. Bring the mixture to a simmer over medium heat, stirring constantly. Add the butter and reduce heat to low; cook and stir 5 minutes longer or until the pudding becomes thick enough to evenly coat the back of a metal spoon.
4. Remove from heat and stir in the strawberries puree.
5. Divide over 6 small dessert cups and allow to cool for at least 30 minutes.
6. Cover each dessert cup with plastic wrap and refrigerate for at least 1 hour.
