Lemon Poppy Seed Muffins | Episode 325

2 eggs
110 g white sugar
1 tsp vanilla extract
grated zest of 1 lemon
1/2 lemon juice
135 g melted butter
135 ml milk
250 g self-rising flour
5 tbsp poppy seeds
INSTRUCTIONS
1. Preheat the oven to 180C 356F and line 12 muffin cups with paper liners.
2. In a medium mixing bowl, cream the eggs, sugar and vanilla for about 5 minutes. Stir in the milk, melted butter, lemon juice and grated zest. Add the flour and stir until well combined
3. Add the poppy seeds and stir until incorporated.
4. Divide batter over the lined muffin cups and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
