Asparagus Soup | Episode 323


YIELD: Serves 3 - Prep Time: 15 M - Cook Time: 20 M - Total Time: 35 M




  • 300 g asparagus, peeled and wooden ends removed
  • 2 tbsp olive oil
  • 1 tbsp all purpose flour
  • 400 ml mlik
  • 600 ml water
  • pinch ground nutmeg
  • salt

1. Roughly chop the asparagus. Get a deep pan on the heat and add a good lug of olive oil. Gently fry the chopped asparagus for about 2-3 minutes. Add the flour and cook for about 2 minutes more
2. Add the milk, water, salt and ground nutmeg and simmer for 15 minutes. Stirring occassionally.
3. Remove from the heat and blitz with a hand-held blender or in a liquidizer.
