Upside-Down Peach Cake | Episode 328

  • 165 g butter, softened
  • 130 g white sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 sachet baking powder (16g)
  • 130 g all purpose flour
  • 400 g peaches, canned or fresh
  • 1 tbsp sliced almonds, optional


1. Preheat the oven to 175C 347F and grease a round cake tin and place the peaches and sprinkle with almond slices.
2. In a medium mixing bowl, cream the softened butter, sugar, eggs and vanilla extract.
Add the all purpose flour and baking powder, stir until well combined and smooth.
3. Spoon the batter over the peaches. 
4. Bake for about 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and cool for about 20 minutes before inverting onto a plate.
