German Cheese Buns - Käsebrötchen Recipe | Episode 327


YIELD: 16 Buns - Prep Time: 1 H 10 M - Cook Time: 25 M - Total Time: 1 H 35 M


  • 300 ml lukewarm milk
  • 21 g fresh or dry yeast
  • 1 tbsp sugar
  • 50 ml vegetable oil + extra 
  • 1 egg white
  • 4 tsp salt
  • 425 g all purpose flour
  • 1 egg yolk
  • 100 g grated cheese, your favorite


1. In a medium bowl, combine the lukewarm milk, yeast and sugar. Stir and let sit for about 10 minutes. Add the oil, egg white, salt and half of the flour. Stir until well combined. Add the remaining flour and knead, add about 1 tsp oil more and knead until smooth ball of dough begins to form. Add more flour if dough is too sticky.
2. Cover and allow to rise for about 50 minutes. 
3. Line a baking tray with parchment paper and preheat the oven t0 175C 347 F.
4. Roll dough into 16 equal size balls and place on lined baking sheet. Brush top with egg yolk and top with grated cheese.
5. Bake in preheated oven for about 25 minutes or until golden to deep brown.
