Cauliflower Cake


YIELD: Makes 1 cake - Prep Time: 20 M - Cook Time: 45 M - Total Time: 1 H 6 M




  • 7 eggs
  • 1 onion, chopped
  • handful parsley, chopped
  • 100 g cheese, grated (your favorite)
  • 140 g all purpose flour
  • 1 sachet baking powder(15g)
  • 2 tbsp sunflower oil
  • 1 tsp salt
  • 1/4 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1 tsp turmeric
  • 1 medium cauliflower, breaked in florets


1. Place florets in a pot with a teaspoon of salt, cover them with water and simmer for 15 to 20 minutes, until quite soft. Drain and pureé florets with a fork. Set aside.
2. Preheat the oven to 210C 410F and grease a baking dish with butter or oil.
3. In a medium mixing bowl, combine the eggs, onion, parsley, cheese, spices and salt. Stir in the flour and baking powder. Add the cauliflower pureé and stir until well combined.
4. Pour the mixture over the greased pan. Bake in preheated oven for about 40 to 45 minutes or until golden brown.
5. Serve warm or at room temperature. Before you serve the cake, be sure to run a knife around the pan.
