Upside-Down Orange Cake

INGREDIENTS

For the toping
  • 1 orange, thinly sliced
  • 2 tbsp light brown sugar
For the cake
  • 165 g butter, softened
  • 130 g light brown sugar
  • 4 eggs
  • pinch salt
  • 1 tsp vanilla extract
  • 100 g walnuts, chopped
  • 1 sachet baking powder(16g)
  • 130 g all purpose flour









INSTRUCTIONS


1. Preheat the oven to 175C 347F and grease a 23 cm round cake pan. 
2. Sprinkle 2 tablespoons light brown sugar over the bottom of the greased cake pan and place the orange slices.
3. Make the cake: In a medium mixing bowl, beat the butter and sugar until creamy. Beat in the eggs, pinch salt and vanilla extract. 
4. Add the flour and baking powder. Beat until well combined. Stir in the chopped walnuts.
5. Pour the batter over the oranges in the cake pan. being careful not to move them around too muchSmooth the top of the batter with a wet offset spatula or the back of a spoon. 
6. Bake until a toothpick inserted in the middle of the cake comes out clean, 40 to 45 minutes.
7. With an offset spatula or a butter knife, loosen any parts of the cake that seem to be sticking to the side of the pan. Invert the cake onto a plate or platter while it's still hot. Let cool until warm or room temperature, then cut into wedges with a serrated knife to serve.
