Blackberry Muffins

Ingredients
- 2 eggs
- 50 g white sugar
- 1 teaspoon vanilla extract
- juice of half lemon
- 60 ml heavy cream
- 40 g butter, melted
- 125 g all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch salt
- 80 g blackberries, frozen
Instructions
1. Preheat the oven to 175 C 347 F and line 6 muffin cups with paper liners.
2. In a medium mixing bowl, whisk together the eggs and sugar until creamy. Stir in the melted butter, heavy cream and vanilla extract. Add flour, baking soda, baking powder and salt. Stir until incorporated. Stir in the blackberries.
3. Using ice cream scoop or 2 tablespoons, divide batter over 6 paper liners.
4. Bake in preheated oven for about 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
