Neapolitan Melt Away Cookies



125 gr butter, softened
2 eggs
150 ml vegetable oil
150 gr powdered sugar
150 gr cornstarch
1 sachet baking powder
1 tsp vanilla extract
350 gr all purpose flour
2 tbsp cocoa powder


1. Preheat your oven to 180C(356F) and line 2 baking sheets with parchment paper.

2. In a large mixing bowl, stir together the eggs, oil and butter. Add the cornstarch, powdered sugar, vanilla and baking powder. Stir until combined. Add the flour and knead until a ball of dough begins to form. Add more flour if the dough is too sticky.

3. Divide the dough in 2 equal parts. Mix one portion dough with cocoa powder.

4. Roll the dough in equal size white and chocolate balls. Grabbing one chocolate cookie ball and one white batter ball, press them together and use your hands to gently form into a cookie shape, flattening and turning to smooth the edges and form a flattish but still thick cookie shape. Place on lined sheet. Repeat with remaining dough. 

5. Bake in preheated oven for about 8 to 10 minutes.
