Gingerbread Man


Gingerbread Man recipe

Makes 35 cookies

225 gr butter, softened
1 egg and 1 egg yolk
160 gr dark brown sugar
160 ml molasses or another dark syrup
pinch salt
1 tbsp ground ginger
1 tsp cinnamon
pinch ground nutmeg
500 gr all purpose flour


1. In a large bowl, stir together the ingredients and knead briefly until smooth, wrap in clingfim and leave to chill in the refrigerator for 4 hours. ( or fridge for 20 minutes).

2. Preheat the oven to 160C/320F Line two baking trays with greaseproof paper. 

3. Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. 

4. Decorate with mini M&M's and chocolate chips.

5.Bake for 15-18minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling.
