Halloween themed ghost meringues

makes: 20 meringues

2 egg whites 
pinch salt
100 gr caster sugar
choco chips for the eyes


1. Preheat oven to 100c / 200f. Line a baking sheet with parchment paper.

2. In a large bowl, beat the egg whites with a pinch salt use an electric mixer or electric hand beaters to whisk the egg whites until soft peaks form.

3.Add the sugar, a spoonful at a time, whisking until just combined.
After the last of the sugar has been, added, continue to whisk for a further 2-3 minutes or until the mixture is very thick and glossy, all the sugar has dissolved and a long trailing peak forms when the whisk is lifted. 
The best way to test if all the sugar has dissolved is to rub a little of the mixture between your thumb and forefinger.

4. Transfer the mixture to the pastry bag with round tip; 1/2 inch (1.25 cm). Pipe, with even pressure, about 2 inch (5 cm) high mounds of meringue the the baking sheet. Carefully press 2 chocolate chips, candy eyes or edible silver dragees into each meringue ghost.

5. Place in preheated oven for 80 minutes. Remove from oven and let to cool down.
