Croque Madame


Croque madame recipe

makes 4

8 slices of thick white bread
1 tbsp butter, melted
8 slices cheese
4 slices ham, optional
4 eggs

For the bechamel sauce

2 tbsp butter
2 tbsp all purose flour
200 ml milk
2 tbsp grated Parmiggiano
pinch ground pepper


1. Preheat oven to 200c/390f and line a baking sheet with parchment paper.
Brush both sides of the bread with melted butter and place them into the oven to toast on both sides.

2. Make the bechamel: In a small saucepan, melt together the butter, add the flour and cook them together stirring constantly for about a minute. Add the milk, season with salt, pepper and cook the sauce on medium heat until it thickens, it should take about 5 minutes, stir in the cheese and set aside.

3.  To assemble the sandwich, smear some of the bechamel on one slice of the toasted bread, lay one slice of cheese followed by a couple slices of ham.Top with the other slice of bread, smear some of the bechamel on top of the bread and top it with a slice of cheese.
Place back in oven for 3-4 minutes until cheese melted.

5. While the top is browning, quickly fry some eggs in a little oil in a skillet for just a few minutes. Season with salt and ground black pepper. Top each sandwich with a fried egg.
