Ingredients
  • 200g butter, at room temperature
  • 1 egg
  • 125 ml oil
  • 100g confectioners sugar
  • 8g vanilla sugar
  • 8g baking powder
  • 100g cornstarch
  • 500g all-purpose flour
  • 80g chocolate chips
  • 1,5 tbsp cocoa powder
Method:

1. Preheat the oven to 170 C/ 340 F and line two baking trays with parchment paper.

2. In a large mixing bowl, cream the butter, egg and oil. Add the confectioners sugar and vanilla, beat for about 30 sec. Slowly add the cornstarch and flour, beat until incorporated. Add more flour if needed. Add the chocolate chips to the dough and beat until well mixed.

3. Divide the dough in 2 parts. Mix one portion dough with cocoa powder.

4. Use an ice cream scoop, scoop about 1/2 tbsp of the white dough and 1/2 tbsp of the cocoa dough. Place the cookies on lined baking tray.

5. Bake in preheated oven for about 20 to 25 minutes.
