Ingredients
  • 500g cherries, fresh or frozen
  • 165g granulated sugar
  • 1 tbsp lemon juice
  • grated zest of 1 lemon
  • 250 ml jar
Method

1. Wash and pit the cherries. 

2. Transfer the cherries to a deep pan. Bring to a boil over medium heat. 
Add the sugar and simmer over medium high heat for about 15 to 20 minutes. 
Stir in the grated lemon zest and juice. Simmer for a few minutes then remove from the heat.

3. Pour the jam into the jar and close the lid. Allow to cool completely before refrigerating.


*The jam will stay at room temperature for a month or more in good weather. You can also keep the jam in the fridge for 3 to 6 months.
