There are seven veggies hidden in this super tasty pasta sauce.
You can make this sauce with every vegetable you want!









Ingredients

  • 1 courgette
  • 1 medium carrot, peeled
  • 1 bell pepper
  • 2 celery sticks
  • 1 garlic clove
  • 1 medium onion
  • handful of basil leaves
  • 600g tomatoes
  • 2 tbsp olive oil
  • 2 tsp salt
  • about 300 ml water or stock
  • 2 x 16 oz jars (2 x 470 ml), washed with soap and warm water
Method

1. Wash the vegetables, peel the onion, garlic and carrot. Cut the vegetables.
Just make an X on the bottom of your tomatoes and throw them into a pot of boiling water for about 5 minutes. Then peel back the skin with a knife or your fingers. Cut the tomatoes.

2. Heat the oil in a large saucepan. Add the vegetables and fry for 15 minutes over medium heat. Add the tomatoes, salt and basil cook for about 10 minutes more. Pour about 100 ml of water to the pan and bring to a boil. 

3. Remove from the heat and blitz either with a hand blender or in an upright blender until smooth. Add the remaining 200g water or stock if needed and bring to a boil for about 5 to 10 minutes. Pour the sauce into jars, containers or freezer bags and allow to cool before refrigerating or freezing.
