Ingredients

Filling
  • 4 medium red apples
  • 150g (1 cup granulated sugar)
  • 1 tsp cinnamon powder
  • 1/2 cup walnuts
Dough
  • 200g butter, at room temperature
  • 50 ml (1/3 cup) oil
  • 3 tbsp yogurt
  • 1/2 tsp baking soda
  • 1 tbsp lemon juice
  • 130g (3/4 cup) granulated sugar
  • 500g (3 1/2 cup) all-purpose flour 
Method

1. Make the filling: Wash, peel and grate the apples in a skillet. Cook grated apple, sugar and cinnamon until it absorbs the juice for at least 10 minutes. Chop the walnuts and cook with the apples for a few minutes. Remove the mixture from the heat and transfer to a plate. Allow to cool completely.

2. In a large mixing bowl, stir together the butter, sugar, oil, yogurt, baking soda and lemon juice. Add the all-purpose flour and knead or beat until well combined. Add a little more flour if needed. Cover the dough with plastic wrap and refrigerate for at least 15 minutes.

3. Preheat the oven to 170 C 335 F and line a baking sheet with parchment paper.

4. On a lightly floured surface, roll out half of the dough. Using a cookie cutter (or a glass) cut out circles. Take one circle of dough and place about a teaspoon of apple filling on one half of it, then fold it and place it on a baking paper-lined tray. Repeat with remaining dough.

5. Bake in preheated oven until golden brown for about 15 to 20 minutes. 

6. When they are cool enough, sprinkle them with icing sugar.
