Mini Turkish Pide Bread (Ramazan Pidesi) | Episode 448

Ingredients
  • 100 mL water, lukewarm
  • 100 mL milk, lukewarm
  • 14g instant yeast
  • 1 tbsp granulated sugar
  • 350g all-purpose flour
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1 egg, beaten to brush the top
  • nigella seeds and sesame seeds to sprinkle on top
Method: 

1. In a small bowl, combine the lukewarm milk, lukewarm water, yeast and sugar. Stir and allow to sit for 5 minutes.

2. In a large mixing bowl, combine the flour, dissolved yeast and salt. Knead until well combined. Add the olive oil and knead for at least 5 minutes until smooth.

3. Oil a medium bowl, transfer the dough to the oiled bowl. Cover and allow to rise for about 1 hour or until doubled in size.

4. Transfer the dough to the kitchen counter. Divide dough in 4 balls. Flatten each ball of dough. Use the blunt edge of a knife or your fingers draw four parallel lines across the top of the dough, then four more perpendicular to those to make a criss-cross pattern. Place on a lined baking tray. Cover the baking tray and allow to rise for about 20 minutes.

5. Preheat the oven to 200 C - 390 F.

5. Make the patterns again and brush the top of each bread with the beaten egg. Sprinkle some nigella and sesame seeds on top. Bake in preheated oven for about 15 minutes or until golden brown.
