Ingredients
For the cake:
- 3 eggs
- 75g sugar
- 8g vanilla sugar
- pinch salt
- 75g all-purpose flour
- fruit for decorating
For the whipped cream:
- 400g heavy cream
- 5 tbsp powdered sugar
- 8g vanilla sugar
- 250g mascarpone
Method
1. Preheat the oven to 200 C - 390 F and line a baking sheet with parchment paper.
2. In a large mixing bowl, beat the eggs and salt for about 2 minutes. Add the sugar and vanilla sugar. Cream the eggs and sugar for at least 5 minutes on medium speed. Sift in the flour and beat on low speed for 20 sec. Use a spatula and fold gently until blended.
3. Pour the batter into lined pan. Gently tap pan on counter to remove any air bubbles. Bake in preheated oven for about 8-10 minutes. Remove from the heat and allow to cool completely.
4. Meanwhile, make the whipped cream, In a large mixing bowl, beat the heavy cream, vanilla and powdered sugar until stiff peaks begin to form. Beat in the Mascarpone until well combined. Fill a piping bag with a star tip with the whipped cream. Cut the fruit and set aside.
5. Cut the cooled cake in 10 pieces. Pipe out the whipped cream on the 5 cakes. Place the other 5 cakes on the top. Pipe out remaining whipped cream on top of the cakes. Decorate with the fruit.
