Ingredients
- 2 eggs
- 165g granulated sugar
- 1 tsp vanilla sugar or extract
- 135 ml sunflower oil
- 135g self-rising flour
- 1 tsp ground cinnamon
- 1 large carrot, grated
- 1 small apple, cubed
- handful chopped walnuts
Method
1. Preheat the oven to 180 C - 350 F and line muffin pan with 12 paper liners.
2. In a mixing bowl cream the eggs, vanilla and sugar for about 10 minutes. Add the sunflower oil, cinnamon and self-rising flour. Beat at low speed for 30 sec. Stir in the grated carrot, walnuts and cubed apples.
3. Fill each muffin cup with the batter and bake in preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool completely.
