Ingredients
  • 4 tbsp olive oil
  • 1 tbsp tomato paste
  • 1/2 tbsp pepper paste
  • 2 cups bulgur
  • 1 tsp salt
  • 1 1/2 cups hot water
  • juice of half lemon
  • 2 tbsp pomegranate molasses (optional)
  • 1/2 tsp red pepper flakes
  • pinch ground black pepper
  • handful chopped parsley
  • 2 spring onions, finely chopped
  • 4 cucumber pickles, finely chopped
  • 1 tomato, finely chopped

Method:

1. In a mixing bowl, combine the bulgur, salt and half of the water. Stir together and let sit for about 5 minutes. Pour the remaining water over the bulgur, stir and let sit for another 3 minutes. 

2. In a small saucepan, mix the olive oil, tomato paste and pepper paste. Saute over medium heat for about 2 minutes. 

3. Add the tomato paste, the lemon juice, red pepper flakes, black pepper, pomegranate molasses and chopped vegetables to the bulgur.
