Ingredients
  • 2 egg whites, at room temperature
  • pinch salt
  • 100 g white sugar
  • 1/2 tsp ground ginger
  • pinch grated nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp vanilla bean paste or extract(optional)
  • 1 tbsp molasses(optional)
  • Plus extra ground cinnamon and ground ginger(optional)


Instructions

1. Preheat the oven to 100C/210F and line a baking sheet with parchment paper.
2. In a small bowl, stir together the sugar, the grated nutmeg, ground ginger and ground cinnamon. Set aside.
3. In a large bowl, beat the egg whites with a pinch salt use an electric mixer or electric hand beaters to whisk the egg whites until soft peaks form. Add the sugar mixture, a spoonful at a time, whisking until just combined. After the last of the sugar has been, added, continue to whisk for a further 2-3 minutes or until the mixture is very thick and glossy, all the sugar has dissolved and a long trailing peak forms when the whisk is lifted. Add the vanilla bean paste and beat for another 2 minutes.
4. Add the molasses. Stir with a spatula to give the meringue a swirl effect. 
5. Use piping bag with round tip; 1/2 inch (1.25 cm). Fill the piping bag with the meringue.
6. Pipe little kisses on lined baking tray, sift some cinnamon and ginger on the kisses(optional) and place in preheated oven for 90 minutes.
