Ingredients
  • 160 g all purpose flour
  • 110 ml lukewarm milk
  • 7 g dry yeast
  • 1 tsp white sugar
  • 2 tbsp olive oil
  • 1 tsp salt
  • about 50 g cheddar cheese, cubed
  • 50 g butter, melted
  • 4 tbsp olive oil
  • 2 tbsp parsley, chopped
  • 1 garlic clove, minced
  • about 50 g parmesan cheese, shredded
  • about 50 g cheddar cheese, shredded


Instructions

1. In a medium mixing bowl, dissolve the yeast in 110 ml lukewarm milk and 1 tsp sugar. Let sir for 5 minutes.
2. Combine the 160 g all purpose flour and 1 tsp salt. Add the yeast mixture. Stir until well combined. Add 4 tbsp olive oil. Knead until a smooth ball of dough begins to form. Cover with stretch wrap and a kitchen towel. Allow to rise for about 1 hour or until doubled in size.
3. Meanwhile, stir together 4 tbsp olive oil, 2 tbsp chopped parsley and 1 minced garlic clove. Set aside. Preheat the oven to 220C/428F. Grease a bundt pan with oil or cooking spray.
4. Divide dough into small pieces. Flatten each piece in the palm of your hand and add some of the cubed cheddar cheese. Gather the edges and pinch the biscuit into a ball. 
Place the balls in the greased bundt pan.
5. Brush the top of the balls with the melted butter and with the parsley mixture. Top with shredded parmesan and shredded cheddar cheese.
6. Bake in preheated oven for about 30 to 35 minutes or until golden brown.
