Cinnamon Meringue Star Cookies | Episode 374

Ingredients

For the cookie dough:
  • 180 g ground almonds
  • 120 g confectioner's sugar
  • 1 egg
  • 1 egg yolk
  • 80 g all purpose flour
  • 1 tsp ground cinnamon
  • 1/3 tsp ground ginger
  • pinch salt
Meringue:
  • 1 egg white
  • pinch salt
  • 40 g confectioner's sugar
  • 1 tsp vanilla bean paste(optional)


Instructions

1. Preheat the oven to 150C/300F and line a baking tray with parchment paper.
2. In a medium mixing bowl, beat the egg white and pinch salt for about 2-3 minutes. Add the confectioner's sugar and beat until stiff peaks form. Add the vanilla bean paste and beat for about 2-3 minutes more. Set aside.
3. In a medium mixing bowl, combine the egg, egg yolk, ground almonds, ground cinnamon, ground ginger and pinch salt. Beat until well mixed. Add the flour and beat until incorporated. Add more flour if dough is too sticky.

4. Transfer the dough to a lightly floured surface. Roll dough out. Using a cookie cutter, cut out star-shaped cookies and transfer to a lined baking sheet. Brush with meringue and bake in preheated oven for about 15 to 20 minutes.
