Ingredients
- 350 g all purpose flour
- 1/2 tsp salt
- 7 g dry yeast
- 40 ml lukewarm water
- 105 ml lukewarm milk
- 30 g white sugar
- 1/2 tsp ground cinnamon
- 1 tsp vanilla bean paste or vanilla sugar, optional
- 112 g soft butter
- 35 g raisins
- 2/3 lemon zest
- 35 g dried fruit, optional
- 35 g almond slivers
Extra
- 20 g melted butter for top
- about 30 g confectioner's sugar for top
Instructions
2. Combine the yeast mixture, flour, salt, cinnamon, butter, lemon zest and vanilla bean paste. Stir until well combined.
3. Set aside approx. one quarter of the dough. Cover and let sit for 1 hour.
4. Add the raisins, almond slivers and dried fruit to the remaining dough. Knead until incorporated. Add a little more flour if dough is too sticky. Cover with plastic wrap and a clean kitchen towel. Let sit for 1 hour.
5. Preheat the oven to 180C/355F and line a baking tray with parchment paper.
6. Roll fruit dough into a log. On a lightly floured surface roll out remaining dough to a large oval. Place fruit dough onto the lower third of the oval and roll up. Tuck in overlapping sides.
7. Transfer to a lined baking tray seam side down. Bake in a preheated oven at 180°C/355°F for approx. 40 min. until golden. Leave to cool for approx. 10 min.
8. Brush with melted butter and sprinkle with confectioners’ sugar.
