Linzer Cookies with Pecans and Cardamom | Episode 506

 Linzer cookies are a traditional Christmas cookies in Austria.
The cookies are buttery and soft filled with jam.
I use roasted pecans and a cardamom in the dough. 
You can also use roasted almonds or walnuts.

Ingredients
  • 125g unsalted butter, softened
  • 60 ml sunflower oil
  • 50g confectioners sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 350g all-purpose flour
  • 1/2 cup pecans
  • pinch of cinnamon
  • 4-5 cardamom seeds or 1/2 tsp cardamom powder
  • about 5 tbsp jam
Method

1. Preheat the oven to 160 C / 320 F and line two baking sheets with parchment paper.

2. Roast the pecans, put nuts with cardamom seeds in bowl of the food processor and pulse until the nuts are finely ground.

3. To make the dough: Beat the butter, oil, sugar, cornstarch, vanilla and batter until well combined. Add the ground pecans and cinnamon, beat until well mixed.

4. Divide the dough in half, and pat each half into a disc. On a floured surface, roll one disc of dough out about 1/8"-thick. Using a 2 1/2" round cookie cutter, cut out cookies. Transfer rounds to a parchment-lined baking sheet. Gather the scrap dough, roll, and repeat. You need 24 rounds.

5. Cut 24 rounds from the remaining dough. Use the end of a round piping tip to make a cutout in the center of each. Place cookies on the lined baking sheet.


6. Bake in preheated oven for about 25 minutes. Allow to cool completely.

7. To fill the cookies: Shift confectioners' sugar over the top of the cookies with the holes in them. Spoon 1/2 teaspoon of jam into the center of the other cookies, spreading it slightly. Top with the sugar-dusted cookies.
