White Chocolate Coconut Cookies | Episode 500

Ingredients
- 125g butter, softened
- 1 egg
- 50g confectioners sugar
- 8g vanilla sugar
- 125g cornstarch
- 225g all-purpose flour
- 8g baking powder
- 500g white chocolate, melted
- 400g coconut
Method
1. Preheat the oven to 170 C / 340 F and line 2 baking sheets with parchment paper.
2. Cream the butter and egg. Add the confectioners sugar and vanilla, cornstarch, flour and baking powder. Knead until a smooth ball of dough begins to form.
3. Roll dough into small balls and place on lined baking sheet.
4. Bake in preheated oven for about 20 minutes or until lightly browned.
5. Remove from the heat and allow to cool completely.
6. Coat the cookies with the melted chocolate and roll in coconut.
7. Place the cookies in refrigerator for at least 10 minutes to set.
*You can keep the cookies up to 3 months in fridge. Remove them from the fridge and then you can coat with melted chocolate and coconut.
