Turkish Shortbread with Pistachios (Un kurabiyesi) | Episode 495

Ingredients
  • 250g butter, at room temperature
  • 5 tbsp confectioners sugar
  • 410g all-purpose flour
  • 6 tbsp pistachio flour
  • Extra confectioners sugar for dusting
Method

1. Preheat the oven to 170 C / 335 F and line a baking tray with parchment paper.

2. In a large mixing bowl, combine the butter, sugar and flour. Knead until well combined. 
Add the pistachio flour and knead to a smooth ball of dough. 

3. Divide dough into 4 balls. Using your palm, roll each piece of the dough into a cylinder about the thickness of a hot dog. Cut the rolls into small pieces. Place on lined baking sheet.

4. Use the tip of a fork and run it lengthwise down each piece of dough to create lines that are lightly scratched into the tops.

5. Bake in preheated oven for about 20 minutes or until lightly browned. 
Allow to cool for about 3 minutes, dust some confectioners sugar on top of each cookie.

*Store them at room temperature in an air-tight container for up to 14 days.
