Quick Artisan Bread Recipe | Episode 496

 Homemade artisan bread without sourdough or overnight rise.

Ingredients
  • 7g active dry yeast
  • 1 tsp granulated sugar
  • 300g water, lukewarm
  • 10g salt
  • 360g all-purpose flour, plus extra for dusting


Method

1. Mix sugar yeast and water, add flour and salt. Knead until a smooth dough begins to form.
It's a sticky dough, you don't need to add more flour. Dust the dough with flour. Cover the bowl and allow to rise for 60 minutes.

2. Flour a proofing basket or a bowl and set aside.

3. Flour a cutting board, transfer the dough to the floured cutting board. Sprinkle a bit of flour across the top of the dough, then begin shaping it into a round loaf. Pull each corner of the dough in towards the center and repeat until the dough feels tight and begins to resist your folds. Flip the dough over and tap it into a round loaf. 

4. Place the dough into the floured basket. Cover and allow to rise for 30 minutes.

5. While bread is rising, place an empty dutch oven with the lid on in your oven and heat the oven to 235 C / 460 F.

6. Tip your bread dough gently out of the proofing basket onto parchment paper and transfer to the hot dutch oven. Score the bread with a sharp knife.

7. Cover with the lid and bake for 30 minutes with lid. 

8. After 30 minutes, remove the lid from your dutch oven and bake the bread for about 20 minutes more.

9. Use the corners of your parchment paper to lift the bread out of the dutch oven and place onto a cooling rack. Let cool for at least 20 minutes before cutting into it.
