Ingredients
  • 2 egg whites
  • 1/2 tbsp lemon juice
  • 200g almond flour
  • 200g granulated sugar
  • 5g matcha powder
  • pinch salt
  • 4 tbsp confectioners sugar
Method

1. Preheat the oven to 150 C / 300 F and line a baking pan with parchment paper.

2. In a large mixing bowl, beat egg whites and lemon juice until the hold soft peaks.

3. Whisk together the almond flour, sugar, salt and matcha powder.

4. Add the egg whites to the dry ingredients and stir until well combined.

5. Roll dough into 25-27 balls and roll it in the confectioners sugar. Place on lined baking sheet.

6.Bake in preheated oven for about 25 to 30 minutes. Allow to cool completely.

* The cookies will keep at room temperature in airtight container or bag for up to 7 days.
