Ingredients
  • 115g unsalted butter, softened
  • 2 eggs
  • 210g granulated sugar
  • 300g all-purpose flour
  • 1/4 tsp baking soda
  • 100 ml milk
  • 1/4 lemon juice
  • 1 lemon zest
  • 100g blueberries + 1 tbsp all-purpose flour
Method

1. Preheat the oven to 175 C / 350 F and grease a loaf pan.

2. In a large mixing bowl, cream the butter. Add the eggs and cream for another 2 minutes. 
Pour in the sugar and beat for about 5 minutes.

3. Add the flour, baking soda and milk. Beat for about 1 minute. Then add the lemon juice, lemon zest and 3/4 of the blueberries tossed with flour. (If you use frozen blueberries, do not defrost). Stir until well combined.

4. Pour the batter to the greased loaf pan. Spread evenly then top with the remaining blueberries.

5. Bake in preheated oven for about 50 to 60 minutes or until a toothpick inserted in the center comes out clean.

6. Remove from the heat. Allow to cool completely before removing from the pan and slicing.
