Ingredients

  • 125g butter, at room temperature
  • 1 egg
  • 115g confectioners sugar
  • 2 tbsp espresso
  • 1 tbsp cocoa powder
  • 70g cornstarch
  • 380g all-purpose flour
  • 1 tsp baking powder
  • 8g vanilla sugar
Method:

1. Preheat the oven to 180 C / 360 F and line a baking tray with parchment paper.

2. In a large mixing bowl, cream the butter, egg, cocoa powder, espresso, vanilla sugar and confectioners sugar.

3. Add the flour, baking powder and cornstarch. Mix until well combined. Add more flour if dough is too sticky.

4. Roll dough into 50 ovals and place on lined baking sheet. Use a knife to bisect the cookie balls a little less than half way down.

5. Bake in preheated oven for about 15 minutes. 

*To store the cookies: allow them to come to room temperature, then place them in a resealable container. The cookies will hold well for up to a week.
