Ingredients
Dough:
- 250 ml water, lukewarm
- 1 tbsp granulated sugar
- 14g active dry yeast
- 380g all-purpose flour
- 1 tsp garlic powder
- 1,5 tsp salt
- 6 tbsp olive oil
Vegetables:
- 1 zucchini
- 1 small onion
- handful cherry tomatoes
- 1 tbsp olive oil
- 80g feta cheese, crumbled
- salt to taste
Method:
1. In a large mixing bowl, combine the yeast, lukewarm water and sugar. Let sit for about 10 minutes. Add the flour and salt, stir until well combined. Add 3 tbsp oil and knead until the dough is elastic, smooth and shiny. Add the remaining oil and knead for 2 minutes more.
2. Cover the bowl with a clean tea towel. Leave the dough to rise for about 45 minutes to 60 minutes.
3. Meanwhile, chop the onion, zucchini and cherry tomatoes. Heat the olive oil in a skillet. Roast the chopped onion and zucchini for about 5-6 minutes. Add the cherry tomatoes and roast for another 2 minutes. Season with salt. Allow to cool completely.
4. Preheat the oven to 220 C 420 F.
5. Transfer the dough to a lined baking pan and form into a loaf. Top with the crumbled feta cheese and roasted veggies.
6. Bake in preheated oven for about 30-35 minutes. Allow to cool for at least 15 minutes before slicing.
