Raspberry White Chocolate Brownies | Episode 430

Ingredients
  • 3 eggs
  • 100g light brown sugar
  • 1 tsp vanilla sugar or extract
  • 100g self-rising flour
  • 125g melted butter + 150g dark chocolate chunks
  • 200g white chocolate chips or chunks
  • 125g frozen or fresh raspberries 
  • Extra white chocolate chunks and raspberries for top 
Method:

1. Preheat the oven to 180C - 350F and line a brownie pan with parchment paper.

2. Melt the butter and stir together with the dark chocolate. Let sit until the chocolate is completely melted.

3. In a large mixing bowl, beat the eggs, light brown sugar and vanilla until creamy. Add the butter mixture and stir until combined. Beat in the self-rising flour until incorporated.

4. Add the raspberries and white chocolate, stir until well combined. 

5. Pour the batter into the lined pan. Top with extra raspberries and white chocolate chunks. Bake in preheated for about 45 minutes. 

6 Allow to cool for at least 10 minutes before cutting.
