Ingredients
  • 2 ripe bananas,
  • pinch of salt
  • 1/2 tsp cinnamon powder
  • 1 tbsp honey, optional
  • 2 tbsp currants
  • 1 tbsp chocolate chips
  • 1 tbsp almond shavings
  • 100g oats

Method:

1. Preheat the oven to 175 C - 350 F and line a baking sheet with parchment paper.

2. In a large mixing bowl, mash the bananas, stir together with the cinnamon powder, pinch salt, honey, currants, chocolate chips and almond shavings. Add the oats and stir until well combined. 

3. Roll into 14-16 balls and flatten lightly with your hands. Place on the lined sheet.

4. Bake in preheated oven for about 15 minutes. Remove from oven and cool on wire rack. Cookies will keep in a covered container for a few days, or they can be frozen and reheated.
