Ingredients
- 180g butter, softened
- 4 eggs
- 135g light brown sugar
- 1 tsp vanilla extract
- zest of 1 lime
- juice of 1/2 lime
- 180g self-rising flour
- 4 tbsp milk
- 100g blueberries, frozen or fresh
- 1 tbsp granulated sugar and extra blueberries
Method:
1. Preheat the oven to 175 C - 350 F and line a muffin tin with 12 paper liners.
2. In a mixing bowl, beat the butter until creamy. Beating in the eggs one at a time. Add the light brown sugar and beat until smooth. Add the zest of a lime, the juice of a half lime, 1 tsp vanilla extract and the self-rising flour. Beat until incorporated, about 30 sec.
Add the milk and mix for another 30 sec. Add the blueberries and stir together.
3. Fill each cupcake liner half full. Top with granulated sugar and blueberries. Bake at 350 for 14 to 18 minutes, until a toothpick inserted into the center comes out clean.
4. Remove cupcakes from pan and transfer to a wire rack to cool completely before serving.
