Homemade Lemon Curd Recipe | Episode 424

SERVES: 400 ML LEMON CURD

COOK TIME: 20 MINS
TOTAL TIME: 25 MINS










Ingredients
  • 400g granulated sugar
  • juice of 4 lemons
  • grated zest of 4 lemons
  • 150g butter
  • 4 eggs


Method:


1. In a medium bowl, whisk the eggs and set aside. In a small heavy saucepan over medium heat, whisk sugar, lemon juice, grated lemon zest and butter until blended. Cook, whisking constantly.


2. Remove from the heat, whisk in the eggs and place back to heat. Allow to simmer over medium heat, whisking constantly until mixture is thickened and coats the back of a spoon. If there are only a few small lumps you could also pass the lemon curd through a sieve.


3. 
Transfer to a small bowl or jar and place a piece of plastic wrap directly on top so it is touching the top of the curd. (This prevents a skin from forming on top.) The curd will continue to thicken as it cools. Cool 10 minutes. Refrigerate, covered, until cold.

Refrigerate the curd for up to about 10 days.
