Ingredients
  • 3 eggs
  • 115g  granulated sugar
  • 1 tsp vanilla extract
  • 115g  butter
  • 3 tbsp cocoa powder
  • 120g self-rising flour
  • 500g whipped cream
  • 150g shaved dark or milk chocolate
  • 100g cherry pie filling or canned cherries

Method:

1. Preheat the oven to 180C 350F. Grease and line a 18 cm springform. Set aside.

2. Melt the butter and stir together with the cocoa powder and allow to cool. 
In a large mixing bowl, beat the eggs. Add the sugar and beat until creamy. Stir in the vanilla extract and butter mixture. Beat for about 2 minutes. Add the self-rising flour and beat on low speed for about 30 sec. don't overmix your batter!

3. Pour the batter into the greased and lined springform. To help get rid of air bubbles, tap the pan on the counter a few times. Bake in preheated oven for about 40 to 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for at least ten minutes, then remove from the springform. Allow to cool outside the springform for at least 20 minutes before slicing.

4. Slice the cooled cake horizontally to make 2 layers.

5. Place one layer on a flat plate. Using a spoon, wet the cake with the liquid of the canned cherries. Spread whipped cream over the first layer, top with cherries and the shaved chocolate. Place layer 2 on top and spread the remaining whipped cream on top and the sides of the cake. 
Place cherries on top of the cake and coat the sides and top with the shaved chocolate.

6. Refrigerate to set for at least 60 mins before slicing and serving.
