Spinach and Egg Tart


YIELD: Makes 1 Tart - Prep Time: 10 M - Cook Time: 25 M - Total Time: 35 M



  • 270 g Ready made puff pastry (24x40cm)
  • 100 g shredded cheese
  • 1 tbsp olive oil
  • 100 g pre-washed spinach
  • 3 eggs
  • salt and pepper


1. Preheat the oven to 220C 428F and line a baking sheet with parchment paper.
2. Heat 1 tbsp olive oil in a skillet. Add the spinach and cook for about 2-3 minutes over high heat. Season with salt to taste. Set aside.
3. Unfold the puff pastry and transfer to the lined baking sheet. Fold 1 cm of the edges. Top with shredded cheese, cooked spinach and crack the eggs on top. Season with salt and pepper to taste.
3. Bake in preheated oven for about 20 to 25 minutes or until tarts is set and eggs are cooked medium.
