Spinach Goat Cheese Puff Pastry Tarts

Servings: 4 - Prep time: 10 minutes - Baking time: 15 to 20 minutes - Total time: 30 minutes

Ingredients
  • 4 sheets of puff pastry squares
  • 150 gr frozen spinach, defrosted and thawed
  • 1 tbsp olive oil
  • salt
  • ground black pepper
  • 1/3 tsp garlic powder
  • handful green olives, pitted and sliced
  • handful pine nust
  • 100 gr goat cheese, crumbled
  • 1 egg yolk

Instructions





1. Preheat the oven to 200C(392F) and line a baking sheet with parchment paper.

2. In a mixing bowl, combine the defrosted and thawed spinach, 1 tablespoon of oilive oil, 1/3 teaspoon of garlic powder, salt and pepper. Set aside.

3. Place the puff pastry sheets on a lined baking sheet. Mark a border 1cm in from the edge of the pastry with a sharp knife (being careful not to cut all the way through the puff pastry). 

4. Spread the spinach mixture on the pastry sheet up to the scored border line. Top with sliced olives, pine nuts and crumbled goat cheese. Brush the border with the egg yolk, if desired. Bake for 15 to 20 minutes, until the pastry is lightly browned and filling has puffed up.
