Cranberry Peanut White Chocolate Breakfast Cookies

Cranberry peanut and white chocolate cookies for breakfast.





Ingredients
yield: 30 cookies

170 gr butter, softened
200 gr light brown sugar
1 egg
2 tsp vanilla extract
250 gr all-purpose flour
2 tsp cornstarch
1 tsp baking soda
pinch salt
135 gr white chocolate chips
50 gr peanuts
50 gr oats
100 gr dried cranberries

Directions

Line a baking sheet with parchment paper and preheat oven to 170 c/350 f.

1. In a large bowl using a hand-held mixer or stand mixer, beat the butter for 1 minute on medium speed until completely smooth and creamy.
2. Add the sugar and mix until fluffy.
3. Beat in egg and vanilla on high speed.
4. Add the dry ingredients and mix slowly on low speed until combined.
5. Add the chocolate chips, cranberries, peanuts and oats, knead until evenly disbursed.
6. Roll dough into balls, place on baking sheet and flatten lightly with your hands.
7. Place in oven and bake until golden brown. ( 8-10 minutes).
Allow to cool for 5 minutes on the sheet.
