Banana éclairs


Banana éclairs recipe


125 gram butter
200 millilitre water
pinch salt
130 gram all purpse flour

3 eggs

for the filling

400 millilitre whipping cream
1 banana, blended
1 tsp vanilla extract

For the icing

150 gr melted white chocolate
drops of yellow food coloring

oven: preheated 180 c ( 350 f )
baking time: for about 20 minutes 
( goldenbrown )


1. Place the butter ,pinch salt and water in a pan and meld the butter over medium low heat
2. add the flour stirring in the pan, keep stirring over low heat for about 2 minutes
3. Put the mixture in a bowl to cool down. ( 10 minutes )
4. Preheat oven and line a baking sheet with parchment paper.
5. beat in eggs one by one .

6. Spoon the pastry into a piping bag fitted with a 1.25cm/½in plain nozzle and pipe 12 x 10cm/4in lengths onto the greased baking tray.

7. Place in oven and bake until golden about 20 minutes; remove from oven allow to cool
8. Make filling:
Combine whipped cream with blenden banana and vanilla extract, spoon in piping bagand place in refrigerator before using.
9. Make the icing:
Combine the melted chocolate with drops of yellow colorant.

9. Pipe in each eclair with whipped cream
10. Dip the tops of the éclair in the melted chocolate and let the chocolate set before serving.
Place in refrigerator.
