Ingredients
For the pie crust:
  • 100 g ice-cold unsalted butter
  • 55 g powdered sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 60 ml cold water
  • 225 g all purpose flour
For the filling:
  • 4 cored, peeled and sliced apples
  • 1 tbsp raisins
  • 55 g granulated sugar
  • 1 tsp cinnamon powder
  • pinch nutmeg, optional
Remaining ingredients:
  • 1 egg
  • 1 tbsp ground pistachios (or breadcrumbs/almond flour)
  • almond slivers or cinnamon sugar to coat the crust.
  • about 1 tbsp powdered sugar.


Instructions

1. Cream the butter, powdered sugar and vanilla. Add the cold water and half of the flour. Stir until well combined. Add the remaining flour and knead until a smooth ball of dough begins to form. Wrap the dough with stretch foil and refrigerate for about 20 minutes.
2. Preheat the oven to 200 C / 350 F.
3. Make the filling: Peel, core and slice the apples. Combine the sliced apples with sugar, the raisins, ground nutmeg and cinnamon powder. Set aside.
4. Transfer the dough to a lightly floured parchment paper and roll it out until it is about 18” in diameter and prick it all over with a fork. Sprinkle the dough with ground pistachios or breadcrumbs.
5. Transfer to a baking tray.
6. Pour the apple mixture into the center of the dough.
7. Fold up all the sides to the center until it is tightly sealed. Prick the sides all over with a fork. Brush the sides with the beaten egg. Top with almond slivers or cinnamon sugar.

8. Bake in preheated oven for about 40 to 45 minutes or until golden to deep brown.
9. Cool to room temperature. Sprinkle with powdered sugar and serve with optional ice cream and caramel.
