Chilli Cheese Sticks | Episode 384

Ingredients

  • 400 g cheddar cheese slices 
  • 2 jalapenos
  • pinch ground black pepper
  • 1/4 tsp smoked paprika powder
  • pot frying oil
For coating:
  • 3 eggs
  • breadcrumbs 
  • 1/2 tsp ground black pepper
  • 1/4 tsp smoked paprika powder
  • salt to taste

Instructions

1. Remove the seeds from the jalapenos and finely chop them. Set aside.
2. Unwrap the cheese and transfer to a bowl. Pour a few inches of water into a pot. Fit the bowl over the pot, making sure the bottom of the bowl does not touch the water. Heat the water to a simmer. Stir gently to melt. Remove from heat. 
Stir in the chopped jalapenos, ground black pepper and smoked paprika powder.
3. Line the bottom and sides of a pan with plastic wrap. Transfer the cheese into it, smooth the top.
4. Chill the mixture in the freezer for about 2 hours.

5. Cut the cheese block into cubes or sticks.
6. Beat eggs in a bowl. In another bowl, stir together the breadcrumbs, salt, smoked paprika and ground black pepper.
7. Dip cheese cubes in egg mixture and then coat with breadcrumbs. Repeat the process once more and chill in the freezer for about 20 minutes before frying.
8. Meanwhile, heat the pot with frying oil. Deep fry the sticks. Transfer to a paper towel lined plate.
