INGREDIENTS

  • 250 ml water, lukewarm
  • 14 g dry yeast
  • 1 tsp white sugar
  • 350 g all purpose flour
  • 1,5 tsp salt
  • 4 tbsp olive oil
  • handful sun-dried tomatoes
  • handful fresh basil, chopped
  • handful walnuts, chopped
  • 80 g Goat's cheese, crumbled
Top
  • 1 tbsp water
  • 1 tsp honey 
  • sesame seeds
INSTRUCTIONS

1. Soak the dried tomatoes in warm water for thirty minutes until soft and pliable, drain and cut in small pieces.

2. In a small bowl, combine the yeast, lukewarm water and sugar. Let sit for about 10 minutes. Combine in a large mixing bowl the yeast mixture, flour and salt, stir until well combined. Add 3 tbsp oil and knead until the dough is elastic, smooth and shiny. Add the remaining oil and knead for 2 minutes more. Add the sun-dried tomatoes, walnuts, goat's cheese and basil. Knead until incorporated.

3. Cover with stretch foil and a clean tea towel. Leave to rise for about 45 minutes.

4. On a floured surface, knead the dough and form into a round loaf. Place on a lined baking sheet. Cover the dough again with a clean kitchen towel and leave to rise for about 45 to 60 minutes. 

5. Preheat the oven to 220C 428F. Fill a heated roasting tray with 500 ml hot water, to create steam. Combine the water and honey. Set aside.

6. Cut a cross into the top of the loaf with a sharp knife. Brush the top with the honey mixture and sprinkle with sesame seeds.
Bake in preheated oven for about 30 minutes or until golden to deep brown.


7. Remove from the oven and cool on a wire rack.
