Pistachio Meltaway Cookies | Episode 337

  • 125 g butter, softened
  • 1 egg
  • 100 g powdered sugar
  • 7, 5 g baking powder
  • 200 g all purpose flour
  • 50 g pistachios, ground
  • 2 tbsp powdered sugar for top.


1. Preheat the oven to 180C 356F and line a baking tray with parchment paper.
2. In a medium mixing bowl, whisk the butter and egg. Add the powdered sugar and stir until well combined. Stir in the flour and baking powder. Add the ground pistachios and stir until incorporated.
3. Roll into walnut size balls and place on baking sheet. 
4. Bake in preheated oven for about 25 minutes or until golden brown. 
Cool completely on baking tray and dust with powdered sugar.
