Lemon Pound Cake


Lemon pound cake


200 gr butter, softened
200 gr granulated sugar
4 eggs
1 lemon zest, grated
1/2 lemon juice
200 gr all purpose flour
1 tsp baking powder


1. Preheat oven to 175c/347f and grease a (pound) cake tin with baking spray or butter.

2.Make the batter: In a large bowl cream the butter with an electric mixer until smooth add the sugar beat on medium speed for another 2 minutes.
add the eggs one at a time. Beat until combined.
Add the flour, baking powder, lemon juice and grated lemon zest, mixing just incorporated.

3.Bake the cake: Pour the batter into the greased pan and bake for about 60 minutes or until a toothpick inserted in the center of the cake comes out clean.

4.Remove the cake from oven, cool for 15 minutes; invert onto cake plate.
