Soft and Chewy M&M Cookies. Crisp chewy edges, soft centers and loaded with M&M’s.

Ingredients
  • 170g unsalted butter, softened
  • 100g granulated sugar
  • 160g light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 250g all-purpose flour
  • 100g chocolate chips
  • 230g M&M's, crushed
Method

1. Preheat the oven to 190 C / 375 F and line two baking trays with parchment paper.

2. In a medium bowl, beat butter and both sugars for 2 minutes, until light and fluffy. Add egg and vanilla extract, mixing until combined, scraping the sides of the bowl as needed. On low speed, add in flour, salt, baking powder and baking soda, mix until just combined. Gently stir in M&M's and chocolate chips.

3. Scoop balls of dough, between 1.5 and 2.5 tablespoon portions. Drop dough onto prepared baking sheets leaving an inch or two for spreading.

4. Bake for 8-10 minutes, until the edges of the cookies are set but the center is still slightly underdone, this will create a soft cookie.

5. Place the baking sheets on wire racks and allow the cookies to cool completely. They will firm up as they cool.
